Professional Human Being is sure a lot to ask of a person in these capital-driven, artificial-intelligence times. It’s also the name of a gold-medal-winning hazy IPA from Ambitious Ales, the Long Beach brewery bringing its suds to Costa Mesa. Its grand opening will be a weekend-long affair at The Lab Anti-Mall on Saturday, Oct. 24 and Sunday, Oct. 25.

For the five high school chums behind the brewery — Garrett Carroll, Jon Cuthbert, Jerome De Leon, Russell Feldt, Danny Karpinski and Juan Carrillo — it’s also a bit of a homecoming. The founders hail from Orange County (Cypress/Buena Park area), with a 2012 trip to the Oregon Brewers Festival helping spark the idea for the brewery. Inspired to make their own beer, the friends spent years tinkering before opening Ambitious Ales in 2019 in Long Beach’s Bixby Knolls neighborhood.
With their first location firmly planted in Long Beach, their next chapter brings them to The LAB, which, fittingly, stands for “Little American Business.”

“As an independent craft brewery, we couldn’t be happier to open at The Lab Anti-Mall, which is based on fostering small businesses and creative brands,” said cofounder Danny Karpinski, in a written announcement. “We know Orange County and Costa Mesa, specifically, are full of craft beer lovers who will appreciate our approach to beer, creativity and our strong sense of community.”

The brewery’s beer lineup, in part, includes Professional Human Being, a hazy IPA that earned a gold medal at the 2024 Great American Beer Festival. Ambitious Ales also makes the IPA with Citra, Nelson and Motueka hops, describing the flavors akin to jasmine tea and citrus. And Central Perk, its coffee beer, nabbed the bronze medal at the festival in 2019, the same year the brewery opened in Long Beach.
Alongside its signature beers, Ambitious Ales also makes small-batch and seasonal releases. The Costa Mesa brewery and tasting room will have indoor and outdoor seating, welcome families and pets, and offer space for sports viewing, community activities and other events.
Opening weekend will feature a full tap list, limited-edition merchandise and DJs spinning vinyl. Smoked & Salted Barbecue will handle food on Saturday, Oct. 24, followed by Hamburgers Nice on Sunday, Oct. 25. It will mark its opening weekend with hours from 11 a.m. to 11 p.m. on Saturday and 11 a.m. to 9 p.m. on Sunday.
